산야초 혼합차의 혼합비율별 선호도 연구

자연은 현대 문명의 발달과 함께 스스로 정화하는 능력을 점차 잃어가고 있
다. 이러한 현상으로 인하여 환경오염과 함께 현대의 질병들은 지난 200년 동
안 빠른 속도로 계속 늘어나고 있다.
따라서 이러한 현대화로 인한 질병과 성인병에 대하여 천연 자연식품의 이용
과 함께 산야초를 이용한 다양한 방안이 확대되고 있다. 일찍이 한방과 의학
에서도 활용되어 왔던 것이 산야초라는 이름의 건강식품으로 활용되고 있는
것이다.
산야초는 자연 상태에서 자란 각종 식물 중 일반 식생활에서 부족하기 쉬운
각종 비타민과 무기질이 풍부하며, 이중 특수 성분은 생리활성 기능도 뛰어난
것으로 최근 그 연구 성과가 다양하게 발표되고 있다. 특히 항산화 효과와
항균 작용, 항암 작용 등 약물 대사와의 관계 등 질병의 예방과 치료 등에서
효과를 나타냄으로 건강 증진과 각종 성인병 예방에 도움이 되는 것으로 알려
지고 있다.
이에 현대인들은 편리함의 추구와 함께 건강적 가치를 요구하고 있는 이때,
우리 땅에서 나는 산야초의 기능성 성분을 용이하게 섭취할 수 있는 산야초차
를 활성화시킬 방안의 모색이 필요하다고 사료된다. 이를 위해 기능성이 뛰어
난 산야초와 발효차를 혼합하여 만든 혼합차를 개발하기 위해 소비자들의 선
호도를 조사하여 산야초 혼합차 개발을 위한 기초자료로 제공하고자 한다.
본 연구는 산야초 혼합차의 혼합비율을 얻기 위하여 관능검사를 통한 선호도
조사연구의 방법을 적용하였다. 민들레, 겨우살이, 곰취, 차조기, 박하 등의
5종의 산야초를 이용하여 만든 산야초 혼합차에 대한 선호도 조사의 결과는
다음과 같다.
산야초 혼합차별 혼합 비율에 따른 선호도는 민들레 혼합 20%가 가장 높게
나타났으며, 그 다음 순으로는 겨우살이 혼합 10%, 곰취 혼합 20%, 차조기 혼
합 10%, 박하 혼합 10% 순으로 나타났다.
산야초 혼합차 선호도는 전체적인 가중치를 부여한 결과, 겨우살이 혼합차
가 가장 높게 나타났으며 민들레 혼합차, 박하 혼합차, 차조기 혼합차, 곰취
혼합차 순으로 나타났다.
순 산야초차 선호도는 전체적으로 가중치를 부여한 결과, 겨우살이차가 가장
높게 나타났으며, 박하차, 민들레차, 차조기차, 곰취차 순으로 나타났다.
또한 독특한 향을 가진 차조기의 경우, 혼합차에 대한 반응보다 순 산야초
차에 반응을 보이고 있으므로 추후 본향을 살린 순 산야초차의 형태로 차 제
품으로의 개발을 제안할 필요성이 있다고 사료된다.
그리고 앞으로 여러 혼합차를 마시겠다는 의사가 80.0%로, 산야초 혼합차
가 개발되었을 때의 음용 의지를 가지고 있음을 확인할 수 있었다.
이상의 본 연구결과, 산야초를 이용한 새로운 차 제품의 개발은 앞으로의 한
국 차산업의 육성 방안이 될 것으로 사료되는 바이다. 따라서 본 연구에서
나타난 산야초 혼합차의 혼합 비율에 따른 선호도 결과가 앞으로 산야초를
바탕으로 한 혼합차 형태의 새로운 차제품의 개발에 기초자료로 활용되기를
바란다. 또한 본 연구에서는 차의 대중화를 위해 발효차와의 blending을 먼저
시도하였는데, 이후에는 차의 다양성과 그 기능성을 더욱 높일 수 있는 산야
초와 녹차와의 blending을 후속연구로 제안하는 바이다.
